Day number "I don't even know anymore" and some yogurt parfaits

It was a cute idea to post what I was eating everyday, but yeah- not going to happen. I'm still dedicated to my 30lb weight loss goal, but every day posting is just straight up cray. Especially with two kids. So, we're just going to wing it now 👍

There's something about the seasons that drive my cravings. Colder weather: oatmeal, omlets, and so on. Warmer weather has me wanting yogurt parfaits and smoothies, all day er' day!

I prefer homemade granola, so I can control what goes in it. Toped with some vanilla flavored greek yogurt or some fruit, and this is a fabulous breakfast or lunch (although the sugar content can be a wee bit high). This is my favorite recipe:

3 cups rolled oats
1/3 cup vegetable or coconut oil
1/4 cup honey
1/2 tsp each of vanilla and almond extract
1/2 tsp salt

Mix all ingredients together and bake on a parchment or silpat lined baking sheet for 15 minutes on 350 degrees. Stilr once halfway through the cook time. Let cool, and then add your favorite mix ins. I like mixed dried fruit, coconut, flax or chia, or nuts.

As spring gets closer, I'll start dabling more in salads, but for now I'm still enjoying the soups and stews of winter :)

Today's menu:
Breakfast: yogurt and granola for me, pancakes for kids
Lunch: vegetable soup and grapes
Snack: a la Croix and some pita chips
Dinner: Tuna casserole, a la 1970's housewife.
